Ingredients

  • 2 cups milk
  • 4 eggs
  • 3 tbsp butter (melted, but cooled slightly)
  • 1 tbsp sugar
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 1/2 cups flour

Directions

  1. Combine all ingredients in a blender and mix until batter is smooth.
  2. Refrigerate for at least 30 minutes, but preferably overnight.
  3. Heat pan over medium low (and spray with non-stick cooking spray, if needed- I usually can do without).
  4. Add a small amount of batter (about 1/4 cup). Twirl pan from side to side to create a large, even circle.
  5. Cook for about 1 minute or until lightly golden brown, then flip and cook for an additional minute or until both sides are lightly browned.

Notes

Extra crepes freeze very well.

Fill with anything you desire- whipped cream, pudding, fruits, Nutella, peanut butter, etc.

If you want to do savory crepes, leave out the vanilla.
