Ingredients

  • 1/3 cup cocoa powder, sifted
  • 1/2 cup sugar
  • 2 cups milk, divided
  • 4 tsp cornstarch
  • 3 egg yolks
  • dash of salt
  • 1/4 cup chocolate chips (I use dark or semi- sweet), melted
  • 1 tbsp butter
  • splash of vanilla

Directions

  1. In a saucepan whisk together cocoa powder, sugar, and 1 1/2 cups milk. Bring to a simmer over medium heat, stirring constantly. Remove from heat and set aside.
  2. In a large bowl whisk together remaining 1/2 cup milk, egg yolks, salt, and cornstarch.
  3. While whisking rapidly, very slowly pour in the hot milk/cocoa into the egg yolk mixture.
  4. Transfer the entire mixture back into the saucepan over medium-high heat. Whisk constantly until it comes to a full boil.
  5. Immediately reduce heat and simmer for 2-3 minutes, until the pudding is thick.
  6. Remove from heat and mix in the melted chocolate chips, butter and vanilla.
  7. If desired, strain pudding through a fine mesh sieve into bowl.
  8. Press parchment paper directly onto the top of the pudding (this prevents a skin from forming).
  9. Chill until set. Keep pudding refrigerated.
