Ingredients
- 1/3 cup cocoa powder, sifted
- 1/2 cup sugar
- 2 cups milk, divided
- 4 tsp cornstarch
- 3 egg yolks
- dash of salt
- 1/4 cup chocolate chips (I use dark or semi- sweet), melted
- 1 tbsp butter
- splash of vanilla
Directions
- In a saucepan whisk together cocoa powder, sugar, and 1 1/2 cups milk. Bring to a simmer over medium heat, stirring constantly. Remove from heat and set aside.
- In a large bowl whisk together remaining 1/2 cup milk, egg yolks, salt, and cornstarch.
- While whisking rapidly, very slowly pour in the hot milk/cocoa into the egg yolk mixture.
- Transfer the entire mixture back into the saucepan over medium-high heat. Whisk constantly until it comes to a full boil.
- Immediately reduce heat and simmer for 2-3 minutes, until the pudding is thick.
- Remove from heat and mix in the melted chocolate chips, butter and vanilla.
- If desired, strain pudding through a fine mesh sieve into bowl.
- Press parchment paper directly onto the top of the pudding (this prevents a skin from forming).
- Chill until set. Keep pudding refrigerated.
