Ingredients

  • 3/4 cup (94g) flour
  • 1/4 tsp salt
  • 1/2 tsp baking soda
  • 8 tbsp butter
  • 1 cup (200g) brown sugar
  • 1 egg
  • 1/2 cup (125g) peanut butter
  • 2 tsp vanilla
  • 2 cups (160g) old-fashioned whole rolled oats
  • M&Ms (desired amount)
  • Chocolate chips (desired amount)
  • Peanut butter chips (desired amount)

Directions

  1. Whisk together the flour, salt, and baking soda.
  2. Beat butter with the sugar until creamy and light in color.
  3. Beat in the peanut butter, and then the egg until combined. Add the vanilla.
  4. Slowly add the dry ingredient mixture into the wet ingredients.
  5. Fold in the oats and the desired mix-ins.
  6. Let dough rest for 15-30 minutes.
  7. Bake at 350°F for 10-12 minutes, or until golden brown. Cookies will look very soft, but let them rest on the baking sheet for 5 minutes and they will finish baking. Lightly press down on each cookie when they are still hot, to flatten them if desired.
