Ingredients

  • Bacon (4-5 strips, or desired amount)
  • 1 onion (diced)
  • 4-5 cloves garlic (minced)
  • 2 cups chicken broth
  • 8 ounces pasta
  • Spinach (desired amount)
  • Dash of red pepper flakes
  • Salt and pepper (desired amounts)
  • Parmesan (to top the pasta, use desired amount)

Directions

  1. Cut bacon strips into pieces and sauté until brown and crispy. Remove the bacon and pour off any excess fat, leaving a small amount in the pan.
  2. Add the diced onion to the pan and cook until soft and transparent. Add the garlic and sauté for an additional 1-2 minutes.
  3. Add the chicken broth, pasta, and seasonings to the pan.
  4. Cover and bring to a boil over medium high heat. Once boiling, reduce heat and let simmer with the cover on for about 10 minutes, or until the pasta is soft.
  5. Remove from the heat and add spinach. Let the spinach wilt or heat up (depending on if fresh or frozen was used).
  6. Right before serving, mix the cooked bacon into the pasta.
  7. Serve topped with Parmesan cheese if desired.
