Ingredients
- 3/4 cup sugar
- 1/4 cup brown sugar
- 3/4 cup butter (softened)
- 1/4 cup molasses
- 1 egg
- 2 1/4 cups flour
- 2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/2 tsp cloves
- 1/4 tsp nutmeg
- Mixture of 1/4 cup sugar and 1/2 tsp cinnamon (for coating the cookies)
Directions
- Whisk the flour, baking soda, salt and spices together until well combined.
- In a separate bowl, beat the sugars, butter and molasses together until creamy and light in color. Then beat in the egg.
- Slowly mix the dry ingredients into the wet ingredients until well combined.
- Cover the dough and refrigerate for at least an hour.
- Scoop the dough and roll into a ball. Roll the ball in the cinnamon/sugar mixture to coat.
- Bake at 375°F for 9-11 minutes. Let cookies rest on the hot baking sheet for a few minutes before moving to a cooling rack.
