Ingredients

  • 3/4 cup sugar
  • 1/4 cup brown sugar
  • 3/4 cup butter (softened)
  • 1/4 cup molasses
  • 1 egg
  • 2 1/4 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp cloves
  • 1/4 tsp nutmeg
  • Mixture of 1/4 cup sugar and 1/2 tsp cinnamon (for coating the cookies)

Directions

  1. Whisk the flour, baking soda, salt and spices together until well combined.
  2. In a separate bowl, beat the sugars, butter and molasses together until creamy and light in color. Then beat in the egg.
  3. Slowly mix the dry ingredients into the wet ingredients until well combined.
  4. Cover the dough and refrigerate for at least an hour.
  5. Scoop the dough and roll into a ball. Roll the ball in the cinnamon/sugar mixture to coat.
  6. Bake at 375°F for 9-11 minutes. Let cookies rest on the hot baking sheet for a few minutes before moving to a cooling rack.
