Ingredients

  • 1lb sausage (we like to use hot)
  • 1 onion (diced)
  • 2-3 carrots (diced)
  • 2-3 celery stalks (diced)
  • Garlic (minced)
  • 3-4 potatoes (diced)
  • 1 cup cooked wild rice
  • 3 tbsp flour
  • 4 cups broth (chicken or vegetable)
  • 1/2 tsp thyme
  • 1 tsp parsley
  • 2 bay leaves
  • Salt and pepper
  • 1-1 1/2 cup heavy cream

Directions

  1. Brown sausage and remove from pot.
  2. Added celery, onions, and carrots and saute until lightly browned. Add garlic and good for a few minutes.
  3. Add flour (and butter if needed) to make a roux, cook for a few minutes until golden brown.
  4. Slowly pour in broth and mix well to combine.
  5. Add the rest of the ingredients, except the heavy cream, and the cooked sausage back into the pot.
  6. Simmer until potatoes are cooked through.
  7. Add in heavy cream and serve.
