Ingredients
- 1lb sausage (we like to use hot)
- 1 onion (diced)
- 2-3 carrots (diced)
- 2-3 celery stalks (diced)
- Garlic (minced)
- 3-4 potatoes (diced)
- 1 cup cooked wild rice
- 3 tbsp flour
- 4 cups broth (chicken or vegetable)
- 1/2 tsp thyme
- 1 tsp parsley
- 2 bay leaves
- Salt and pepper
- 1-1 1/2 cup heavy cream
Directions
- Brown sausage and remove from pot.
- Added celery, onions, and carrots and saute until lightly browned. Add garlic and good for a few minutes.
- Add flour (and butter if needed) to make a roux, cook for a few minutes until golden brown.
- Slowly pour in broth and mix well to combine.
- Add the rest of the ingredients, except the heavy cream, and the cooked sausage back into the pot.
- Simmer until potatoes are cooked through.
- Add in heavy cream and serve.
