Ingredients

  • Sugar Cookie Bar
    • 3 cups flour
    • 1 tsp baking powder
    • 1/4 tsp baking soda
    • 1/2 tsp salt
    • 1 cup (16 tbsp) butter (room temperature)
    • 1 cup sugar
    • 1 egg + 1 egg yolk
    • 1 1/2 tsp vanilla
    • 1 tsp almond extract
  • Strawberry Buttercream
    • 3/4 cup (12 tbsp) butter
    • 1 tsp vanilla
    • 3 tsp lemon juice
    • 1 1 ounce pack of freeze dried strawberries (finely crushed)
    • 2-3 cups powdered sugar (depending on how sweet you want it to be)
    • Milk (to thin the frosting, if needed)

Directions

  1. Whisk together the flour, baking soda, baking powder, and salt.
  2. Beat butter with the sugar until creamy and light in color.
  3. Add the egg and egg yolk and the extracts, mix until combined.
  4. Slowly add the dry ingredients to the wet ingredients.
  5. Press the dough into a greased 9×13 inch pan.
  6. Bake at 350°F for 12-15 minutes, or until turning just barely golden brown.
  7. While the cookie bar is cooling, beat all of the frosting ingredients together until is reaches the desired consistency and sweetness level.
  8. When the bars are cooled completely, spread the frosting on top.
