Ingredients
- 4 chicken thighs
- 2 tbsp chipotle in Adobo sauce
- 2 tsp chipotle chili powder
- 2 tsp cumin
- 2 tsp oregano
- 1 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp parsley
- 2 tbsp oil
- 2 tbsp lime juice
- 1/4 cup white vinegar
- 1/3 cup water
- Garlic (4-5 cloves, crushed)
- Salt and pepper (desired amount)
Directions
- Whisk all ingredients together to make a marinade, add chicken.
- Let marinate for a at least a few hours, overnight is better.
- When time to cook- it can either be done on the grill, in a pan, or in the air fryer. Cook chicken on both sides in desired method until cooked through.
- If desired- chop the chicken roughly into small chunks, and either pan fry it or broil it in order to get it crispy.
