Ingredients

  • 4 chicken thighs
  • 2 tbsp chipotle in Adobo sauce
  • 2 tsp chipotle chili powder
  • 2 tsp cumin
  • 2 tsp oregano
  • 1 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp parsley
  • 2 tbsp oil
  • 2 tbsp lime juice
  • 1/4 cup white vinegar
  • 1/3 cup water
  • Garlic (4-5 cloves, crushed)
  • Salt and pepper (desired amount)

Directions

  1. Whisk all ingredients together to make a marinade, add chicken.
  2. Let marinate for a at least a few hours, overnight is better.
  3. When time to cook- it can either be done on the grill, in a pan, or in the air fryer. Cook chicken on both sides in desired method until cooked through.
  4. If desired- chop the chicken roughly into small chunks, and either pan fry it or broil it in order to get it crispy.
