Ingredients

  • 2-3lb beef roast
  • 4-5 medium-sized potatoes (cubed)
  • 3-4 carrots (cubed)
  • 1-2 onions (cubed)
  • Garlic (minced, desired amount- I usually use a whole head of garlic)
  • 1 tsp thyme
  • 1 tsp tarragon
  • 1 tsp parsley
  • 2-3 bay leaves
  • 1 tbsp Worcestershire sauce
  • 1 tbsp soy sauce
  • 4 cups beef broth
  • 4 tbsp butter
  • 4 tbsp flour
  • Salt and pepper (desired amount)

Directions

  1. Combine all of the ingredients, except the for the butter and flour, into the slow cooker.
  2. Let cook on low for 8-12 hours.
  3. Drain all of the liquid from the slow cooker.
  4. Make a roux with the butter/flour, and use the drained liquid to create a gravy.
  5. Mix the gravy back into the meat/veggies, and serve.
