Ingredients

  • Blackened seasoning
    • 2 tsp smoked paprika
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • 1 tsp oregano
    • 1 tsp thyme
    • 1/4 tsp cayenne pepper
    • Salt an pepper (desired amount)
  • 2-3 chicken thighs (sliced)
  • 1 tbsp oil
  • 2 tbsp butter
  • 2 bell peppers (sliced)
  • 1 onion (sliced)
  • 1 can fire-roasted tomatoes
  • 2-4 ounces cream cheese (use desired amount)
  • 8 ounces elbow mac (cooked and drained)

Directions

  1. Mix spices to make the blackened seasoning.
  2. Season the prepared chicken with half of the blackened seasoning.
  3. Heat the oil and butter in a pan over medium-high heat, fry chicken until browned and cooked through.
  4. Remove the chicken and add the prepared veggies. Let veggies cook down until soft and browned.
  5. Add the tomatoes, cream cheese, and the rest of the blackened seasoning to the pan. Heat until the cream cheese is melted and sauce is well blended.
  6. Combine the noodles and chicken with the sauce.
