Ingredients
- 1 3/4 cups (218 grams) flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup butter (softened)
- 3/4 cup (190 grams) peanut butter
- 3/4 cup (150 grams) brown sugar
- 1/4 cup (50 grams) sugar
- 1 egg
- 1 tsp vanilla
Directions
- Whisk together the dry ingredients.
- Beat the butter and sugars until creamy and light in color.
- Mix in the peanut butter until creamy.
- Add the egg and vanilla, mix until smooth and combined.
- Slowly add the dry ingredient mixture into the wet ingredients, mix to combine.
- Scoop the dough into balls of uniform size (I use a small cookie scoop for this). Using a fork, lightly press down on the dough balls to create the classic crisscross pattern.
- Bake at 350°F for 8-10 minutes or until lightly golden around the edges. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
