Ingredients

  • 1 3/4 cups (218 grams) flour
  • 1/2 tsp baking powder
  • 3/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup butter (softened)
  • 3/4 cup (190 grams) peanut butter
  • 3/4 cup (150 grams) brown sugar
  • 1/4 cup (50 grams) sugar
  • 1 egg
  • 1 tsp vanilla

Directions

  1. Whisk together the dry ingredients.
  2. Beat the butter and sugars until creamy and light in color.
  3. Mix in the peanut butter until creamy.
  4. Add the egg and vanilla, mix until smooth and combined.
  5. Slowly add the dry ingredient mixture into the wet ingredients, mix to combine.
  6. Scoop the dough into balls of uniform size (I use a small cookie scoop for this). Using a fork, lightly press down on the dough balls to create the classic crisscross pattern.
  7. Bake at 350°F for 8-10 minutes or until lightly golden around the edges. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
