Ingredients

  • 1lb bag of split peas
  • 1 onion (diced)
  • 3-4 carrots (diced)
  • Garlic (crushed, use desired amount- I usually use a whole head of garlic)
  • 1 ham-bone
  • 2 bay leaves
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1/2 tsp parsley
  • 6 cups vegetable broth
  • Salt and pepper (desired amount)

Directions

  1. Add all ingredients into a slow cooker. Let cook on low for about 8 hours or on high for about 6 hours.
  2. When it is done cooking, remove the ham-bone.
  3. Using an immersion blender, blend the veggies until it forms a creamy soup.
  4. Cut the ham from the ham-bone into bite sized pieces.
  5. Add ham pieces back into the soup and serve.
