Ingredients
- 1lb bag of split peas
- 1 onion (diced)
- 3-4 carrots (diced)
- Garlic (crushed, use desired amount- I usually use a whole head of garlic)
- 1 ham-bone
- 2 bay leaves
- 1/2 tsp thyme
- 1/2 tsp basil
- 1/2 tsp parsley
- 6 cups vegetable broth
- Salt and pepper (desired amount)
Directions
- Add all ingredients into a slow cooker. Let cook on low for about 8 hours or on high for about 6 hours.
- When it is done cooking, remove the ham-bone.
- Using an immersion blender, blend the veggies until it forms a creamy soup.
- Cut the ham from the ham-bone into bite sized pieces.
- Add ham pieces back into the soup and serve.
