Ingredients
- 1 1/2 cup warm water
- 1 packet active dry yeast (or equivalent amount)
- 1 tsp salt
- 1 tbsp brown sugar
- 1 tbsp butter (melted)
- 3 3/4 – 4 1/4 cup flour
- 1/2 cup baking soda + 9 cups water (bring to boil)
- 1 egg (beaten)
- Salt for sprinkling (if desired, I use course kosher salt)
Directions
- Whisk yeast with warm water and allow to sit for 1 minute.
- Add salt, brown sugar, and butter. Whisk until combined.
- Slowly add 3 cups of flour, 1 cup at a time, until dough is thick (you can use a stand mixer with the dough hook attached or a wooden spoon).
- Add additional flour, 1/4 cup at a time, until dough is no longer sticky.
- Poke the dough with your finger- if it bounces back, it’s ready to knead.
- Knead the dough for 3 minutes (either with the dough hook or by hand on a floured surface).
- Place dough in a greased bowl, cover, and let rest for at least 10 minutes in a warm area.
- Preheat oven to 425°F and bring the water/baking soda to a boil. Line a baking sheet with parchment paper.
- Cut the dough ball into sections, roll out a section, and cut into bites (of desired size).
- Boil small batches of bites for 10-20 seconds, remove from water, and set on prepared baking sheet.
- Brush bites with beaten egg and sprinkle with salt, if desired.
- Bake for 10-15 minutes, or until golden brown.
