Ingredients
- 1 cup butter (softened)
- 1 cup brown sugar
- 1/4 cup granulated sugar
- 2 eggs
- 1 tbsp vanilla
- 1 tbsp molasses
- 1 1/2 cups (190g) flour
- 1 tsp baking soda
- 1 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- A few dashes of allspice
- 1/2 tsp salt
- 3 cups (240g) old-fashioned whole rolled oats
- Raisins (desired amount)
Directions
- Whisk together dry ingredients (flour, baking soda, spices, and salt). Set mixture aside for now.
- In separate bowl, cream the butter and sugars together until smooth, about 2 minutes. Add eggs and mix until combined. Add vanilla and molasses, mix until combined.
- Slowly beat the dry ingredients into the wet ingredients on low until well combined.
- Mix in oats and raisins until combined. Dough will be thick and VERY sticky.
- Chill the dough for 30-60 minutes.
- Scoop dough and form balls of dough (I use a small cookie scoop for this), and place on baking sheet about 2 inches apart.
- Bake at 350°F for 11-13 minutes, or until lightly browned around the edges. Let cookies cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
