Ingredients

  • 1 cup butter (softened)
  • 1 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs
  • 1 tbsp vanilla
  • 1 tbsp molasses
  • 1 1/2 cups (190g) flour
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • A few dashes of allspice
  • 1/2 tsp salt
  • 3 cups (240g) old-fashioned whole rolled oats
  • Raisins (desired amount)

Directions

  1. Whisk together dry ingredients (flour, baking soda, spices, and salt). Set mixture aside for now.
  2. In separate bowl, cream the butter and sugars together until smooth, about 2 minutes. Add eggs and mix until combined. Add vanilla and molasses, mix until combined.
  3. Slowly beat the dry ingredients into the wet ingredients on low until well combined.
  4. Mix in oats and raisins until combined. Dough will be thick and VERY sticky.
  5. Chill the dough for 30-60 minutes.
  6. Scoop dough and form balls of dough (I use a small cookie scoop for this), and place on baking sheet about 2 inches apart.
  7. Bake at 350°F for 11-13 minutes, or until lightly browned around the edges. Let cookies cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
